What Is Actually in an Acai Bowl? Every Layer, Explained

An acai bowl looks simple: purple blend on the bottom, pretty things on top. But every bowl is really three decisions stacked in a cup, and each one changes what you are actually eating. Here is the anatomy, layer by layer, from a shop that has been building them since 2011.

Layer one: the base, where bowls are won or lost

The base is blended frozen fruit, thick enough to eat with a spoon. The question is what goes into the blender. At most shops, nothing does: the base was blended at a factory, sweetened, frozen into a tub and scooped to order.

Ours goes into the blender when you order. Whole frozen strawberries, blueberries, banana, mango, pineapple or raspberries, depending on the bowl, plus organic acai or pitaya, moving with real apple juice, coconut milk or water. The Original, our signature since 2011, is strawberry, blueberry, banana and acai sorbet. That is the entire base recipe.

Layer two: the toppings

Granola brings the crunch. Ours is certified gluten free, and it is the only granola we carry, so every bowl that gets granola is a gluten free bowl. Then fresh fruit, sliced to order: banana, strawberries, blueberries, mango, pineapple, whatever the bowl calls for.

Then the nut butters, and this is where we get precious about it. The peanut butter is made in house from our own recipe, which we are not sharing, and fifteen years of customers asking has not changed that. The almond and pecan butters we use are natural, single ingredient butters. They show up in bowls like the Chocolate Peanut Butter and the Raspberry Pecan.

Layer three: the drizzle

Most of our bowls finish with a drizzle of real honey. It is a drizzle, not a mixed in sweetener, and it comes off on request, which is also the one word that makes almost any bowl vegan. The Coconut Chia Pudding uses pure maple syrup in the base instead.
